The last Harry Potter book was released NINE years ago. Ima let that sink in… nine. And yet, there are still Harry Potter parties, weddings, fanfics, and halloween costumes. Scripts are written. And now, a series of five movies set before the events of the Harry Potter series are coming out. I couldn’t be happier. I will soak up every piece of the Potter universe that J.K. Rowling puts out until there isn’t any more. And then I’ll re-read and re-watch. Lather, rinse, repeat. Basically, what I’m saying is that I’m super excited for the Fantastic Beasts and Where to Find Them films, which are being released today! In order to celebrate, I’m going to share my recipe for Fizzing Whizbees.
Fizzing Whizbees are a type of candy sold at Honeydukes (and presumably other magical candy shops) that make the consumer float a few inches off the ground. Although the ingredients aren’t printed on the label (the wizarding version of the FDA must be a little more relaxed), many believe that Fizzing Whizbees are made with dried Billywig stings. If you get stung by a Billywig, you levitate a bit, so that makes sense. There is a version sold at The Wizarding World of Harry Potter that is chocolate, but I’m going with the O.G. description that states they are a type of sherbet ball.
This is a pretty straightforward recipe, but the candies take about two days to fully dry. It’s kind of a long haul recipe, but they’re so fun, and so easy! I’m using the cruelty-free, Billywig sting-free version, in honor of Harry’s disgust at their rumored use in candy.
Ingredients
- 1/2 cup Sprite or 7-Up
- 1 1/4 oz packet of gelatin
- 2 lbs of powdered sugar
- pinch of salt
- 3 or more Kool-Aid packets
- food coloring
- citric acid (optional)
Instructions
- Pour the Sprite in a microwave-safe vessel and sprinkle the gelatin on. Allow to sit for 3 minutes.
- Stir the mixture. Heat in the microwave at 10 second intervals, stirring after each interval, until the gelatin is dissolved.
- Pour into the bowl of a stand mixer. Add two cups of the powdered sugar and the salt, mix, and then add the rest of the powdered sugar two cups at a time until incorporated.
- Separate into three even balls. Prepare three plates or pieces of parchment paper, each with half a packet of Kool-Aid and an optional sprinkle of extra citric acid.
- Take one of the balls of dough and make an indention in the middle. Squirt in a little bit of food coloring and the other half of one of your Kool-Aid packets. Knead until incorporated.
- Once incorporated, roll the dough into small, marble-sized balls. Immediately roll the ball of dough in the Kool-Aid/citric acid mixture and set aside to dry.
- Repeat for the other two balls.
- Allow to dry for 24-48 hours and enjoy!
Just a side note- these are actually more sour than fizzy, due to the lack of Billywig. If you wanted an extra bit of fizz, you could roll your candy balls in some crushed up Pop Rocks. I also had a little bit of left-over dough, so I made a few Deathly Hallows candies, too. Let me know what you think of the movie once you see it!

9 years? Oh wow, that’s a long time ago! I think HP is one of the things that I won’t ever get bored of! How soon do you want to eat these after the 24 – 48 hours? Immediately? Do they get hard? What is the texture in general? Chewy?

They do get hard, but if you store them in an airtight container they’re good for about a week I’ve found. In general, their texture is a little softer than Valentine’s day candy hearts, but definitely not chewy! (unless you eat them before they set)
