Easter Egg Cupcakes (with a surprise!)

I have very fond memories of my childhood Easters. My parents always set out cute little baskets of candy for me and my sister, and we loved the thrill of the egg hunt before church. Megan may say she always found more than I did, but that’s only because I’m a good older sister and let  her find more than me (buying it?). Unfortunately for me, I’m in that in-between age where I’m too old to really do many of the traditional Easter activities, but I don’t have kids that I can live vicariously through yet. However, who says I can’t still enjoy Easter treats? These cupcakes are a great way to mix up your traditional Easter basket and can be enjoyed by anyone- kids and kids at heart.

For this project, you’ll need a cupcake recipe, a buttercream recipe, small candy like jelly beans and sprinkles, and royal icing. You can honestly use whatever cupcake/frosting you or your child prefers. For me, I used the lemon cupcake and buttercream recipes from Cooking Classy.

Once your cupcakes have cooked and cooled, remove a core from the center. Make sure you don’t go all the way through the cupcake, because then all the goodies will fall out!

Fill the core with your small candies as full as you can! I wanted to add a mini Cadbury Cream Egg, but that didn’t leave a lot of room for other candies. I used a lot of these Wilton sprinkles I picked up at Michaels.

Next, pipe a large dollop of frosting on top of the cupcake and flatten out with a small spatula.

To decorate, pipe any design you like with your royal icing to make your cupcakes look like Easter eggs. I used the Wilton royal icing recipe and a Wilton No. 3 tip, but you can decorate them any way you want!
