July 31 is Harry Potter and Neville Longbottom’s birthday, and since I kind of grew up with them, I wanted to celebrate! Since it’s summer, I thought a cool treat would be appropriate. In Harry Potter and the Sorcerer’s Stone, Hagrid brings Harry a chocolate and raspberry ice cream with chopped nuts that most likely came from Florean Fortescue’s Ice Cream Parlour on his first visit to Diagon Alley. In Harry Potter and the Prizoner of Azkaban, Harry spent a lot of time studying in the Parlour, and Mr. Fortescue would bring him free ice cream to get him through it. So, we know Harry likes ice cream! This chocolate raspberry ripple ice cream with chopped almonds will definitely hit the spot in this summer heat.
Ingredients
- 3/4 cups granulated sugar
- pinch salt
- 1 cup milk
- 2 tablespoons unsweetened cocoa powder
- 3 egg yolks
- 2 oz semi-sweet chocolate, chopped
- 2 cups heavy cream
- 1 tsp vanilla extract
- 2 cups raspberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- chopped almonds for garnish
Instructions
- In a medium saucepan, heat the sugar, salt, milk, and cocoa powder, stirring continuously until it simmers.
- Lightly whisk the egg yolks in a separate bowl. Add about half the chocolate liquid to the bowl, stir, and then return to the pot.
- Heat until thickened, stirring occasionally to prevent the mixture from boiling.
- Remove from heat and add chopped chocolate. Stir until melted.
- Refrigerate until completely cool.
- Add to your ice cream machine and follow your machine's instructions.
- While your machine is whirring away, add the raspberries, sugar, and lemon juice to a double boiler.
- Heat until the berries have burst and the sugar has dissolved.
- Strain out the seeds and chill until cool.
- Once your ice cream is churned, transfer a layer to a plastic tupperware with a lid. Pour a layer of the raspberry over the first layer. Repeat this process until everything is in the tupperware.
- Take a spoon and lightly swirl the layers.
- Put on the lid and freeze until solid.
- Scoop onto a cone and sprinkle with chopped almonds. Ta-daa!
I added sprinkles, because they’re definitely magical don’t you think? If you’re not a fan of cones, this tastes just as delicious served in a bowl. Scoop away and cheers to Harry and Neville!
