There is nothing quite like a fresh strawberry in the summer, and these scones are so delicious served with clotted cream and jam!
This recipe is taken from Mary Berry’s tea time scones, just adapted for the addition of fresh strawberries.
The Ingredients:
- 1 cup strawberries, chopped
- 1 3/4 cup self-rising flour, plus 2 tbsp
- 1 tsp baking powder
- 3 tbsp unsalted butter, softened
- 2 tbsp sugar
- 1 large egg
- 1/3 cup milk
Make sure you coat your strawberries with some flour to help with all that added moisture! Mix together 1 3/4 cup self-rising flour and the baking powder, and then add the butter with your hands until it resembles fine breadcrumbs.
Next stir in the sugar. Then you want to take the egg and beat it in a measuring glass. Add milk until it reaches 1/3 cup (you might not use all of this). Add the liquid to the dry ingredients until it forms a soft dough.
Stir in the strawberries by hand. If it looks too dry, add a bit more of the milk/egg. If it looks too wet, add a bit more flour. Turn the dough out onto a slightly floured surface and knead a few times. Then shape into balls about 1.5 inches high and place on a parchment paper-lined baking sheet. Brush the tops with milk.
Bake for 8-10 minutes (I actually did 10) until golden brown, and you’re done!
If you want, you can top the scones with a strawberry glaze. All I did to make my glaze was whizz two strawberries in the food processor and then add powdered sugar until it reached a consistency I was happy with.
Serve with clotted cream and jam and enjoy your tea party!

- Set oven to 425 F.
- Coat the strawberries with the 2 tbsp of flour and set aside.
- Mix together remaining flour and baking powder.
- Add butter by rubbing it in with your fingertips until it looks like breadcrumbs.
- Stir in the sugar.
- Beat the egg in a measuring cup. Add milk until it reaches the 1/3 cup mark.
- Add the egg and milk mixture to the dry ingredients and stir until you have a soft, slightly sticky dough.
- Stir in the strawberries.
- Turn out onto a floured surface and knead a few times.
- Shape into circles about 1.5 inches thick and place on a parchment paper-lined baking sheet.
- Brush the tops with milk.
- Bake for 8-10 minutes or until golden brown
