Ingredients:
Smoothie
-1 banana
-1.5 cups frozen cherries
-handful of ice
-3/4-1 cup unsweetened almond milk
Toppings
-1 teaspoon of chia seeds
-1 tablespoon of goji berries
-1 tablespoon of shredded, unsweetened coconut
-two strawberries
-1 tablespoon flaked almonds
-1 tablespoon almond butter
I get really annoyed when you have to scroll through five paragraph essays (and zillions of pop ups) just to get to the ingredients of a recipe post- I mean, I came here for the RECIPE, not a story about your honeymoon and how it was somehow related to a casserole! So moving forward, I’m going to put all my recipes at the top of my posts, starting with this amazingly easy Whole30 smoothie bowl.
Just briefly for those who don’t know, Whole30 is a diet that eliminates sugar, dairy, alcohol, grains and legumes. The idea is that by stripping these things from your diet for 30 days, you can reset and recover. Then you can slowly reintroduce them to really focus on how they make you feel.
I love (and I mean deeply love) all of the things I’m not supposed to be eating, so this has definitely been a challenge. It’s day 21, and LAWD I’m ready for it to be over. It doesn’t help that we recently had literally thousands of chocolate bars delivered to the office that are just sitting there, staring at me… but I’m getting through it! One of my go-to recipes this time around has been this smoothie bowl. It’s so easy and delicious that I actually look forward to having it on the weekends!
After blending up my frozen fruit, banana, ice and almond milk, I like to sprinkle my toppings on in stripes. Your toppings can be totally up to you, but I like things that will add a bit of texture. When I’m not on Whole30, I’ll often add granola, but almonds and coconut work just fine. I’ll admit that a cold smoothie bowl seems like an odd choice when it’s so cold outside, but honestly, I don’t care. I love this so much that I’d eat it for every meal of the day (I may have already done that)! After marveling at how good it looks, I usually mix it up and dig in.
